Cucumber-Mint Tequila and Tonic Scratch

I had the most fabulous cucumber, tequila and tonic drink the other day. It literally screamed Summer!

I'm used to my good ol' gin and tonics. But a tequila and tonic, that I'd never had before. I just love the combination of tequila, lime, cucumber, fresh mint and cilantro leaves. They bring out the best in each other and make for one mighty refreshing drink.

Of course, I can't keep it at just that. Oh no! What I thought would make this drink even more exhilarating, is to turn it into a sorbet. So I did. Although, I will call it a "scratch" instead, since I basically scratched it out of the bowl with a spoon.

You can serve this scratch as an end-of-meal dessert or, dare I say, as a palate cleanser between courses. Heck, it's summer! Enjoy!

Cucumber-Mint Tequila and Tonic Scratch

Ingredients :

2 cups chopped English cucumber, not peeled

1/4 cup cilantro leaves

1/4 cup mint leaves

1/4 cup agave syrup (you can even use a little less)

juice of 1 lime

3/4 cup of good quality tequila blanco

tonic water, I used fever tree tonic

makes 6 servings

Make it :

Combine first 6 ingredients in a food processor. Pulse until smooth.

Pour mixture into a bowl. Chill.

Strain mixture into a storage container and freeze for about 2 hours, stirring the mixture with a whisk every half hour. Freeze your glasses.

Scratch about 1/3 of the mixture right into each glass and top with a little tonic water. Serve immediately with spoons. Enjoy!
