Seafood and Radish Toast

One of my favorite days of the year is coming up this weekend! That's right, you guessed it. I'm talking about Mother's Day. I cannot wait to do absolutely nothing all day, other than eat and drink with family and friends. That's my kinda Mother's Day.

Radishes are in season right now. I really dig their peppery crunch and once in a while I will eat them sliced on a piece of buttered bread with salt and pepper. But you can also use radishes in so many other ways, like in salads, sandwiches or part of a veggie platter. I also like using the radish leaves, which go well in soups and sandwiches. Really, nothing goes to waste here in my kitchen.

Naturally, you can count on me to keep things on the lighter side, even on a special day like mother's day. So, I've got just the right recipe for you to stay on track. This little toast I've created will make for a healthy but delectable lunch, or even an appetizer. The smoked salmon, crab and shrimp will give you tons of protein and omega-3 acids. Add some vitamin C from the radishes, tons of calcium and other vitamins from the leaves and you've got yourself quite the nutritious toast there.  Happy mother's day everyone! Enjoy!

Radish and Seafood Toast

Ingredients :

2-3 tablespoons of low-fat cream cheese or sheep's milk feta

1/2 teaspoon Ketchup

couple of drops of tabasco


cayenne pepper

1 slice of sprouted bread

2 slices of smoked salmon

2 tablespoons of crab

3-4 cooked shrimp

1 radish, thinly sliced

a couple of radish leaves

Make it :

Mix the cream cheese or feta with ketchup and tabasco, and season with salt and cayenne pepper.

Toast the sprouted bread and spread with cheese mixture.

Add smoked salmon, shrimp, crab and radish and garnish with radish leaves. Voila!
